Xibei Cuisines "西北菜”

      “Xibei”(西北Xī Bei)is western China. Xibei Cuisine “西北菜” is famous for the Islamic cuisine. In Chinese, we call it “回餐” (Huí cān) or “清真餐”(Qīng zhēn cān). “Hui” means Muslim and “can” means meal. Because a large number of Muslim populations live in western China, Muslims manage many restaurants. In Islamic cuisine, the original materials of food are beef and lamb. Generally, Muslims are good at making various kinds of noodles. Every Muslim restaurant has the obvious Islamic sign.

      Yangrou Paomo“羊肉泡馍 Yángròu pàomó”, is mutton and bread soup. “Mo” is a kind of Chinese unleavened flat bread. “Yangrou” (羊肉) means mutton and lamb. When customers wait for the lamb broth, they break the flat bread into tiny pieces and add them to lamb broth.

葱油饼

 

      Congyou bing “葱油饼 cōng yóu bǐng”, is green onion pancake. It’s a popular street food in North China. “Congyou” means green onions and “bing” means pancake. It is made from all-purpose flours and chopped onions. It only takes a few minutes to prepare and every can enjoy very delicious green onion pancake!

肉夹馍

 

      Rou jia mo“肉夹馍 ròu jiā mó”, is a Chinese style meat burger. “Mo” is one kind of Chinese bread. It is also called “Guokui” (锅盔), which is made from all-purpose flour. Rou means meet. It can be any kinds of meat. In Islamic cuisine, the meat is lamb and beef. Rou jia mo originated from Han Dynasty, which is supposed to be the earliest meat burger in the world.

      Huajuan “花卷 Huā juǎn”, is one kind of Chinese bread. “Hua” means flowers and “Juan” means rolls. It is the staple food for Muslim people, which is a common substitute for rice and noodle. Huajuan is cooked by steaming “蒸”, a traditional Chinese cook technique.

拉面

 

      Lamian “拉面lā miàn”, is a type of noodle. It is one kind of very common and popular breakfast in north China. It originates from Lanzhou, the capital and largest city of Gansu Province. “La” means stretching and twisting and “mian” means noodle. Lamian is generally beef broth based.
