The duck is usually roasted in a closed or hung oven with fruitwoods so that it is aromatic. The crispy skin and tender texture of Peking Duck is why it is so delicious. There are two styles of Peking Duck and each style has its representative restaurant. Quanjude (全聚德) and Bianyifang (便宜坊) are the two best ones in Beijijng.
